Finally!!

Went through all my retreat goodies!!  I've been in a funk for the past week but I'm out of it.
I got out all my retreat goodies and remembered what a great time we had.  What fun!!

I put pictures in my Halloween bag book for my sister...it turned out really, really cute!!

Looking forward to our Christmas Crop time at the CH!

Can you believe Christmas is only 31 days away!!  Thanksgiving is only 2 days away!!

BTW, I'm thankful for all my "new" scrapbook buddies!

Retreat is over :-(

I'm still trying to recover!  I was so tired yesterday!!  And maybe a little grumpy from lack of sleep!  I took a nap when I got home!

It was fun.  The classes were good but the company was the best!!!

Three weeks until CH Christmas!!!  That means four weeks until the Christmas Cat Costumes need to be finished.  OMG!

Pumpkin Crumple Cake

2 cups pumpkin puree (I use the whole can)
1 (12 ounce) can evaporated milk...(you can use more or less.  If you like it more cake like...use less.  I've been known not to use any..if I didn't have it at the time!)
4 eggs (or 1 cup egg substitute)
1 1/2 cups white sugar
2 teaspoons pumpkin pie spice (or to taste)
1 tablespoon vanilla
1 teaspoon salt
1 yellow cake mix
1 cup chopped walnuts (or pecans)
1 cup margarine, melted
whipped topping if desired

Preheat oven to 350 degrees. Spray 9 X 13 inch pan with cooking spray

Combine pumkin, evaporated milk, egg, sugar, pumpkin spice and salt.
Mix well.
Spread into prepared pan.

Sprinkle the yellow cake mix over the top of the pumpkin mixture and pat down.
Sprinkle the chopped nuts over the cake mix then drizxzle the melted butter over the top.

Bake at 350 for about an hour...hour 10 minutes.

top with whipped topping if desired.
